Super Bowl Sunday Buffalo Wings ala Nochella
Super Bowl Buffalo Wings ala Nochella
This recipe is easy and so good. The taste is there without the red fingers.
1 pkg of wings
2 large zip lock bags
1/4 canola oil
1/2 vegetable oil
6 cloves of garlic (chopped fine)
1 medium sized bottle Louisiana Red Hot Sauce
salt
pepper
Cheyenne pepper
1 cup of flour
1 tbsp of cumin
Remove the end of the wing (you know the part no one wants) and put in a pot for stock. Cut the drumsticks away from the upper part and wash pat dry and place in zip lock bag. Add to the bag the bottle of hot sauce, canola oil, Cheyenne pepper, garlic, salt and pepper and marinade for two days.
In a skillet put vegetable oil and heat, meanwhile put flour, cumin, salt and pepper in second zip lock back and place a dozen pieces in bag, zip and shake. Place the chicken wing parts in skillet and fry until dark golden turning on all sides to make sure cooked through. Remove an place on a parchment paper covered tray. Drain and place on a new serving dish. These wings have all the kick without the red fingers. They are spicy but no so hot you can't stand it. A crowd pleaser.
The tips were used to make a nice chicken soup with tiny shells. It was delicious! Mom enjoyed it, ate it all up!

Grilled cheese is a versatile sandwich. You can dress it up or you can dress it down. It can be paired up or it can stand alone. Anyway you choose it makes for a terrific lunch. I prefer grilled cheese on rye bread with tomato and bacon, you may like it with ham and others may like it plain on white bread. I prefer a tomato basil soup, you may prefer chicken soup and others may choose pea soup or lentle.

Pizza Dolce (Italian sweet pie) sent by Sal Puma of Staten Island

Pizza Dolce (Italian sweet pie)
2 -15 ounce containers Ricotta
4 large eggs
1-1/2 cups powdered sugar
1 tablespoon grated lemomn rind
3 tablespoons fresh lemon juice
1/3 cup almond liqueur
1 cup semi-sweet chocolate mini morsels
1 cup small citrus fruits
2 6 ounce chocolate crumb crusts
Preparation
Stir together first 8 ingredients and pour evenly into crusts.
Bake at 350 degrees for 35-40 minutes or until set and golden brown.
Cool on wire racks, chill 8 hours.

Revamping leftovers from a restaurant!

Saturday I left BJ's in Pearland with almost a whole order of Angel Hair Pasta. Sorry BJ's it was dry, bland and tasteless. Tonight I brought life to it, along with some good taste. I started with olive oil in the pan, fresh garlic squeezed and fresh plum tomatoes cut up (just two). I sauteed them for about five minutes over a low flame. My friend Christine had order stuffed mushrooms and left three on her plate so I took them home as well. You guessed it! I chopped them up and continued to saute' with tomatoes. I added fresh basil, Italian seasoning, fresh Parmesan cheese and half and half. Then added the leftover angel hair pasta and tossed until hot adding a little more half and half to keep it moist. I served with Parmesan cheese and crushed red pepper. Results......all gone! It now had flavor and taste. Something everyone should want in his or her food. Next time a meal is not up to par, take it home and doctor it up! Enjoy!
